New Year Scrambled Eggs
While the most perfect scrambled eggs are definitely down to personal preference, for me, they have to be creamy, tasty and light. By adding cream at the beginning of cooking and smoked salmon at the end they're taken from absolutely delicious to next level!
- 6 eggs
- ¼ cup double cream
- 1 tbsp butter
- Salt and pepper
- 50g smoked salmon, chopped
- Chives to garnish
Whisk your eggs and cream together and season with salt and pepper.
Preheat a large pan over a medium heat. Melt the butter in the pan and add the eggs. Stir constantly towards the end of cooking until the eggs are almost cooked but still have a small amount of liquid left.
Stir in the smoked salmon.
Serve with toasted multi-seed bread and a glass of Champagne!
