While the most perfect scrambled eggs are definitely down to personal preference, for me, they have to be creamy and light. Adding cream at the beginning and smoked salmon at the end takes them from absolutely delicious to next level!
- 6 eggs
- ¼ cup double cream
- 1 tbsp butter
- Salt and pepper
- 50g smoked salmon, chopped
- Chives to garnish
Whisk your eggs and cream together and season with salt and pepper.
Preheat a large pan over a medium heat. Melt the butter in the pan and add the eggs. Stir constantly towards the end until the eggs are cooked but still have a small amount of liquid left.
Stir in the smoked salmon.
Serve with toasted multi-seed bread and a glass of Champagne!
