Ginger & Honey Tonic

There are summer drinks and there are winter ones, and this for me is usually a winter one, but because of the amazing heatwave we've had this week I've tweeked the recipe and it's now become a simple refreshing ice cold drink.

Ginger acts as an anti-oxidant, has powerful enzymes for digestion, eliminates toxins and purifies blood, which is why during winter when I feel a cold coming on, I sip this soothing hot drink. But with the good weather we're enjoying, and in an attempt to eat and drink more nutritiously, especially to help boost our immune systems, I decided to try this as a refreshing ice-cold drink instead, and it's just as delicious.
 
What you will need:
  • 3 tablespoons of grated fresh ginger, frozen for a finer grate
  • 3 slices of ginger
  • 3 tablespoons of honey

 
How to make refreshing ginger and honey tonic:
 
Boil one litre of water in a pan. Add 3 tablespoons of grated fresh ginger, 3 slices of ginger, 3 tablespoons of honey, and set aside to cool.
 
To serve, I like to add a slice of lemon and a spring of mint and sip with a straw.
